Hello and Happy THANKSGIVING my Friends, Welcome to my Southern Kitchen!! Hope all of you are doing well, staying Safe and Healthy and had a great Halloween!!! Y’all know how much I love using different types of Extracts in my Baking, so today I am making a Pound Cake Recipe that has 8 different kinds of Extracts, Southern Eight Flavor Pound Cake!! Moist, decedent, flavorful, and we’re going to pour a Eight Flavor Glaze in the Inside; a great Dessert for Thanksgiving or any time of the Year!!! Ellen’s Pound Cake Recipes Playlist: • Pound Cake Recipes 🍰 Ellen’s Thanksgiving Recipes Playlist: • Thanksgiving Recipes Dry Ingredients 3 cups self rising or all purpose flour 2 tsp baking powder (if using all purpose flour) 1/2 tsp salt (if using all purpose flour) Wet Ingredients 1 cup (2 sticks) unsalted butter, softened 1/2 cup (1 stick) margarine, softened 3 cups white sugar 5 extra large or jumbo eggs, lightly beaten and room temperature 1 cup evaporated milk, room temperature Eight Extracts 1 tsp pure vanilla extract 1 tsp pure almond extract 1 tsp pure lemon extract 1 tsp pure orange extract 1 tsp pure butter extract 1 tsp pure coconut extract 1 tsp pure lime extract 1/2 or 1 tsp pure rum extract, optional Eight Flavor Glaze 1 cup white sugar 1/2 cup water 1 tsp pure vanilla extract 1 tsp pure almond extract 1 tsp pure lemon extract 1 tsp pure coconut extract 1 tsp pure butter extract 1 tsp pure orange extract 1 tsp pure lime extract 1/2 or 1 tsp pure rum extract, optional Baker’s Note: You may use another kind of Extract if you can’t find lime also you can omit the rum and use another flavor (pineapple, banana, maple, strawberry). Grease a 10 inch bundt pan with baking spray or butter and flour; set aside. Preheat Oven to 325 Degrees For the Cake: In a large bowl with hand mixer or bowl of a stand mixer with paddle attachment, add butter, margarine, and sugar; cream on medium speed until fluffy. Next add in the beaten eggs and mix until well combined. Then add the flour alternating with the evaporated milk (beginning and ending with flour) and continue mixing until well incorporated (Scrape the bowl occasionally). Add and mix in the eight extracts. Pour cake batter into the prepared bundt pan; bake for 1 hour, 15 minutes or until toothpick in the center comes out clean. Remove from the oven and put it on a wire rack; poke holes on top of the cake and pour half of the eight flavor glaze on top while it’s hot. Let the pound cake cool completely then remove it from the pan and put it on a cake stand and pour the rest of the glaze on top. Serve with vanilla ice cream or whipped cream (if using) and enjoy! For the Glaze: In a medium or large pot over high heat, add sugar, water, and extracts; stir until well combined and the sugar dissolves; bring to a boil. After it comes to a boil, remove from the heat.
