Add chicken, salt & pepper and cook for 5-7 minutes, until just cooked through. Add garlic and stir - you just want to release the flavor of the garlic Add zest of lemon Add wine and lemon juice, and stir to remove any browned bits off bottom of pan Once it begins to simmer, begin to add spinach and pasta in thirds, stirring between each to wilt the pasta. Add parmesan if you'd like for extra flavor! Once you've added all the spinach and pasta, sprinkle parmesan on top and continue to fold until spinach is completely wilted When serving, sprinkle with additional parmesan Serves 4
