Let's face it... life gets busy and sometimes we just don't have time to cook. That's why I love having freezer meals prepped and ready to go for those hectic times. These are two of my all time favorite foods to have stashed away in the freezer! Better yet, they're my son's favorites so I always know they'll be a hit. For the chimichangas all you need is the following - Large burrito shells Cooked chicken White beans Rice Shredded Cheese (I used the Mexican cheese blend from Costco) Just assemble by filling the shells with the beans, rice, chicken, and cheese. Then, tuck the ends in and roll tight. Next, wrap with parchment, plastic wrap, or foil for the freezer and place in a large ziplock bag. To cook, preheat oven to 400 degrees, rub chimichangas with avocado oil, and bake for 20-25 minutes (longer if frozen). For the enchiladas - Chicken Cheese (I used the Mexican cheese blend from Costco) Black Beans Salsa Verde (I used home canned from our garden, but in the past I've used the Frontera and Siete salsas) Soft Taco Shells Pour some of the salsa verde into a casserole dish. Pour some more salsa into a shallow dish and dip your tortilla shells into the salsa. To assemble, fill the salsa slathered taco shells with the beans, chicken, and cheese and roll. Place them into the prepared casserole dish and bake for 25 minutes at 400 degrees OR wrap and freeze for later.
