I received this recipe from a man who came into my office and handed me the recipe many years ago. I am making a one-half batch because it was a large batch for this recipe. They are very good. Ingredients: (One-Half Batch) 1 cup (2 sticks) unsalted butter, softened 2 cups (12 oz. or 1 bag) chocolate chips 2 large eggs 1 tsp vanilla extract 2 cups all-purpose flour 2+1/2 cups blended oatmeal (I use quick oat and process it in the food processor until very fine.) 1 cup packed light brown sugar, 1 cup white sugar 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 4 oz. Hershey Bar (grated) 1+1/2 cups chopped nuts (I do not add nuts at this time.) Method: 1. Measure oatmeal and blend it in a processor or a blender to a fine powder. 2. In a mixer bowl with a paddle attachment, cream the butter and both sugars until fluffy. Add eggs and vanilla, and mix really well. 3. In a separate bowl, mix the flour, oatmeal, salt, baking powder, and baking soda together. 4. Mix in the flour mixture just until combined. Then add chocolate chips, Hershey bar, and nuts if using. 5. Roll dough into balls about 1 or 1-1/2 tbsp each and place 2" apart on a cookie sheet. 6. Bake at 375°F for 10-12 minutes, depending on the size of the cookies. 7. Let the cookies stand for 10 minutes before removing them to a wire rack to cool completely. 8. Store the cookies in an airtight container.
