In this video, I show you how to make two amazing hot cross bun loaves. I take the faff out of hot cross buns by making them in loaf tins rather than spending ages rolling them into balls. They are easy to slice and toast and, as you'll be making two, you can eat one and give one away to a friend! They also freeze beautifully. ABOUT ME Hey there! I’m Stacey Hart, mum to 3 boys and semi-finalist on The Great British Bake Off 2017. So I decided to share the fun, and create this channel, where I can show you what I get up to, how you can get the kids to help (sometimes!) and we'll hopefully end up with some fab creations you can share with your family & friends like I do. FOLLOW ME Instagram: / staceydees Twitter: / staceydeehart Facebook - / staceydeeskitchen INGREDIENTS & METHOD Two Cranberry Hot Cross Loaves Ingredients 500g Strong White Bread Flour 60g Caster Sugar 7g Salt 10g instant yeast 50g very soft butter 1 large egg and a large yolk 200ml warm milk 30 ml warm water Zest of 1 Orange 1 tsp Mixed Spice 1 tsp Cinnamon ½ teaspoon ginger Pinch of nutmeg 150g Cranberries/Raisins 25g Mixed Peel For the top 50g plain Flour 45g water to make a paste Warm apricot Jam Method Into the bowl of a stand mixer add the flour, caster sugar, orange zest, spices, salt, soft butter, egg, yolk, instant yeast (keep separate from the salt) milk and water (start with 30ml and then use the other 10ml if it seems dry) Combine with a spatula and then use your hand to make sure it’s all incorporated Either knead until nice and smooth (around 8-10 mins) or using the dough hook on the stand mixer knead on a medium speed for around 6 mins until smooth Make out the dough in a lightly oiled bowl, cover and leave to rise for an hour in a warm place After an hour use your fingers to poke in the dried fruit and peel and the turn out the dough onto a table and knead until the fruit and peel have been well incorporated Put back in the bowl, cover and leave for a further hour Lastly turn the dough out onto the surface and punch out the air. Cut it in half You can now shape it and put it into two loaf tins (spray them with oil first so the loaves don't stick.) * Place the tins in a plastic bag and leave for one last hour (or cover with cling film) In the meantime, make the flour paste by mixing the flour and a little water until you get a smooth and not too runny paste. Pop it in a small icing bag until the hour is over Lastly, make a design on the top of your loaf. Either heart, lines or crosses whatever you fancy Bake for 15-20 mins (cover with foil after around 15 mins so it doesn't burn) Turn the loaf out onto a rack Brush the hot loaf with warm apricot jam ** Leave to cool and enjoy! *I like to cut my dough into 4 equal pieces and then use two pieces for each loaf and make a twist but this really isn't necessary at all! ** Microwave it for around 10 seconds and then stir it to make smooth before brushing over the whole loaf
