Hello and Happy Memorial Day my Friends, welcome to my Southern Kitchen! Today I am making another Cobbler recipe and it is another one one of my favorites next to Strawberry Cobbler! Simple, easy, baked in a fluffy, buttery crust and made with fresh, pure Strawberries! A great dessert to serve at your Memorial Day BBQ or anytime in the Summer and everyone will love and enjoy this! 3 cups fresh strawberries, tops removed, ringed, and diced 2 teaspoons freshly squeezed lemon juice 1/2 cup white sugar Crust 1 1/2 cups self rising or all purpose flour 2 teaspoons baking powder (if using all purpose flour) 1/2 teaspoon salt (if using all purpose flour) 1 teaspoon ground cinnamon 1 cup white sugar 1 1/2 cups evaporated milk 1 teaspoon pure vanilla extract 1 teaspoon pure strawberry extract 1/2 cup (1 stick) unsalted butter Preheat Oven to 350 Degrees (for Cobbler and Butter) Place the butter into a 9x13 inch baking dish, put it in the oven and let it melt all the way. Set aside. For the Berries: In a medium bowl, add in the diced strawberries, lemon juice, and sugar; stir until well combined (it will create a glaze). Set aside. For the Crust In a large bowl, add in the flour, (baking powder and salt, if using) cinnamon, and sugar and whisk or sift together until well incorporated. Slowly pour in half of the evaporated milk into the flour mixture and whisk, then add in the rest of the milk and whisk until well combined. Add in the vanilla extract, and strawberry extract and whisk together until well incorporated. Pour the crust mixture on top of the melted butter then add in the diced strawberries (along with the juice from the berries) on top of the crust (do not stir). Bake for 45 minutes. Remove from the oven and let it cool on wire rack. Serve with ice cream, whole strawberry (if desired) and enjoy!
