Recipe: Courtesy of my cousin andrew 😊 Dough • 1 cup (220g) whole milk, room temperature • ½ cup (120g) granulated sugar • 2½ tsp (10g) active dry yeast • 2 large eggs, room temperature • 1 tsp (4g) salt • 76g butter, melted • 4 cups (600g) bread flour Filling • 76g butter, softened • 1 cup (200g) brown sugar • 2½ tbsp (20g) ground cinnamon • ½ tsp (2g) ground nutmeg Cream Cheese Frosting • 4 oz (160g) cream cheese, softened • 57g butter, softened • ⅛ tsp salt • 1 tsp vanilla extract • 2 tbsp (26g) half & half (or milk) • 1½ cups (200g) powdered sugar For Baking • Heavy cream or whole milk (for pouring over rolls before final bake) Instructions 1. Activate the yeast In a bowl, combine the room-temperature milk, granulated sugar, and yeast. Let sit for about 10 minutes until foamy. 2. Make the dough Add the eggs, salt, and melted butter. Mix to combine. Gradually add the flour, reserving about ½ cup for kneading. Knead for about 5 minutes, until the dough is smooth and no longer sticky. 3. First rise Place the dough in a greased bowl, cover, and let rise for 45 minutes or until doubled in size. 4. Roll & fill Roll the dough into a large rectangle. Spread the softened butter evenly over the surface. Mix the brown sugar, cinnamon, and nutmeg, then sprinkle over the butter. 5. Shape the rolls Roll the dough tightly into a log and cut into 1–1½ inch rolls. 6. Second rise Place the rolls in a greased baking dish, cover, and proof for 45 minutes or until doubled. 7. Bake Preheat oven to 350°F (175°C). Bake for 10 minutes, remove from the oven, and pour heavy cream (or milk) over the rolls. Return to the oven and bake for 20–25 minutes, until golden brown. 8. Make the frosting Whisk together cream cheese, butter, salt, vanilla, half & half, and powdered sugar until smooth. 9. Finish Spread the frosting over the warm rolls right after they come out of the oven.
