We’ve teamed up with the one and only @maldonsaltofficial to bring you this comforting Smoky Black Bean & Sweet Potato Stew, featuring a Spicy Orange Salsa. Serves: 2–4 Ready in: 40 minutes Plant Points: 10 Ingredients: 15 INGREDIENTS: Pinch of Maldon Pepper Sea Salt (I’m NEW!) 1 tbsp Mr Organic Italian Organic Extra Virgin Olive Oil 1 heaped tbsp Mr Organic Tomato Puree 2 tins Mr Organic Black Beans 4 spring onions, white parts only, sliced (reserve green tops for the Spicy Orange Salsa) 2 cloves garlic, minced 1 tsp smoked paprika 1 tsp ground cumin 1 tsp chilli powder 1 bay leaf 2 tbsp Mr Organic Italian Organic Extra Virgin Olive Oil 3 small sweet potatoes (or 1 large), peeled and cubed 1 tsp smoked paprika FOR THE SPICY ORANGE SALSA: 2 oranges, thinly sliced, rind removed Reserved spring onion green tops, sliced ½ red chilli, finely chopped Zest and juice of 1 lime Small handful of fresh coriander leaves Pinch of Maldon Pepper Sea Salt To garnish: Sliced spring onion Fresh coriander leaves METHOD: 1.Preheat the oven to 200°C. Place the cubed sweet potato on a baking tray, drizzle with olive oil, sprinkle over the smoked paprika and sea salt, and toss to combine. Roast for 25–30 minutes. 2.Meanwhile, heat 2 tablespoons of olive oil in a shallow pan over medium heat. Add the white parts of the spring onions and fry gently, then add the garlic and stir through. 3.Add the smoked paprika, cumin, chilli powder and bay leaf. Stir until fragrant, then add the tomato puree and cook briefly. 4.Pour in the black beans along with their liquid, season with Maldon Pepper Sea Salt, and stir well. Bring to a gentle boil, then simmer on low–medium heat for 20 minutes, stirring occasionally. 5.To make the Spicy Orange Salsa, combine the orange slices, reserved spring onion tops, red chilli, lime zest and juice, coriander leaves and a pinch of Maldon Pepper Sea Salt in a bowl. Toss to combine. 6.Remove the sweet potatoes from the oven. Serve the smoky black beans topped with the roasted sweet potato and garnish with the Spicy Orange Salsa, sliced spring onion and fresh coriander. 7.
