Today I made these pineapple-shaped pineapple tarts. They are buttery, fragrant, and carefully shaped one by one, perfect for gifting or enjoying with tea. 🔸 Ingredients (12 tarts) 180g Unsalted butter 1.8g Salt 55g Icing sugar 40g Egg 300g Cake flour 28g Almond flour Matcha powder (as needed) 375g Pineapple paste 🔸 How to make: 1. Cream softened butter with icing sugar 2. Add egg and mix until fully incorporated 3. Sift in almond flour and all-purpose flour, gently bring the dough together 4. Color a small portion(24g) with matcha powder 5. Chill both doughs around 30-60mins 6. Portion(25g) and wrap pineapple filling (25g dough + 15g filling) 7. Shape and mold the pineapple tarts 8. Bake at 170°C for 12 minutes, brush with egg yolk, and bake again for 12 minutes 9.
