Of honey Salt and pepper to taste Directions: Preheat oven to 500 degrees F. Mix the dressing ingredients in a jar like a mason jar and shake until thoroughly combined. With the chicken breast, you would like them to be no more than ½ inch thick. You can accomplish this by either cutting them in half by butterflying them or pounding them with a meat pounder. But you really should butterfly them and maybe even pound them a little to even them out. If you don’t cut them first, and you just pound them, you will end up with a very large chicken breast. Place the chicken breast into a 9 x 13 baking dish and cover them with the oil and vinegar dressing. Pour just enough or spoon over just enough to marinate the chicken for 30 minutes to 2 hours. If you go longer than 30 minutes, cover the breast and place them in the refrigerator. When you are ready to cook the chicken caprese, sprinkle a little salt and pepper over all and then lay slices of the fresh mozzarella to cover the chicken. Add 2 to 3 slices of tomato on top of the cheese. Place in the 500 degree F oven for about 13 minutes or until an instant read thermometer reads 165 degrees F.
