Bring water to a boil in a pot and cook the carrots in a colander with the lid closed for about 20 minutes. For the marinade, finely chop the dill and capers and finely chop the nori sheet. Then mix with the remaining ingredients. Let the cooked carrots sit in the water for at least 1 hour. 🥥 Carrot Eggs 2 tbsp flaxseeds 50 g oatmeal 50 g sunflower seeds 100 g carrots 1 tsp Norsan algae oil 150 g dates 70 g nut butter of your choice 2 tbsp water Coating: 4 tbsp desiccated coconut 0.5 tsp Norsan algae oil 0.5 tsp turmeric powder 1 pinch of pepper Grind the flaxseeds. Add the oatmeal and sunflower seeds and mix into flour. Then pour into a bowl. Blend the carrots, oil, dates, nut butter, and water until smooth. Mix with the flour. Shape 1 tablespoon of each egg into a flattened egg. For the coating, mix all ingredients. Dip one side of the eggs into the mixture and press down. Carrot and Corn Fritters with Herb Dip 200g carrots 150g cooked corn 2 spring onions 80g spelt flour, type 630 1 tsp turmeric powder 1 tsp paprika 2 tbsp nutritional yeast 0.5 tsp pepper 1 tsp salt 50ml water 1 tbsp apple cider vinegar Dip 200g sugar-free soy yogurt 1 tsp Norsan algae oil 0.5 bunch fresh parsley 1 garlic clove, grated 0.5 organic lemon (zest) 0.5 tsp pepper 0.5 tsp salt Peel and coarsely grate the carrots. Then combine with the remaining ingredients. Heat oil in a pan over medium heat and fry 2 tbsp of the mixture on each side until golden brown. Topping 0.5 organic orange or lemon (juice & zest) 1 can coconut milk (solid cream only) 1 tsp. Norsan algae oil 0.5 tsp. ground vanilla 2 tbsp. syrup of your choice 200g natural tofu 1 pinch of salt For the frosting, blend all ingredients until smooth. Then refrigerate until the cake is cool. To serve, spread it on the cake or create a pattern with a piping bag.
