From rich, traditional kebabs to an elegant dessert, this episode is perfect for festive cooking and special family meals. ✨ Show: Food Diaries 👩🍳 Chef: Zarnak Sidhwa 📅 Date: 6 February 2026 📺 Channel: Masala TV 📌 RECIPES FEATURED Steamed orange cake Ingredients 185gm butter 3/4 cup caster sugar 2 tsp grated orange rind 3 eggs 1 1/2 cups flour 1 tsp baking powder 1/2 cup milk cream, to serve Syrup: 1/4 cup orange juice 1/2 cup caster sugar 2 oranges, peeled, segmented Method Grease a metal pudding steamer. Line base with baking paper. Beat butter, sugar and orange rind until light and fluffy. Add eggs, 1 at a time. Sift flour over the mixture. Add milk. Fold until just combined. Spoon mixture into prepared tin. Smooth top. Secure lid. Place in a large saucepan. Carefully pour boiling water into pan until halfway up the side of the steamer. Cover pan. Place over medium heat. Bring to the boil. Reduce heat to low. Simmer for 1 hour 30 minutes, topping up with boiling water when necessary. Meanwhile, to make syrup combine orange juice and sugar in a saucepan. Cook, stirring for 3 minutes or until sugar dissolves. Bring to the boil. Reduce heat to low. Simmer for 5 minutes or until thick and syrupy. Remove from heat. Add orange segments. Carefully lift the steamer from water. Stand for 10 minutes. Remove lid. Turn pudding onto a plate. Spoon over syrup. Serve. Nawabi kebabs Ingredients 1/2 cup yellow channa dal, soaked 1/2 cup corn 1/4 cup shredded coconut 2 slices bread, ground to coarse breadcrumbs 1 inch ginger, minced 2-3 green chilies , minced 1 onion, chopped 1 1/2 tsp red chili powder 1 tsp roasted cumin powder 1/2 tsp black salt 1 tsp salt 1/2 tsp cardamom powder 1/4 tsp all spice powder 1 1/2 tsp coriander powder 2 tbsp coriander, finely chopped oil , for frying For Smoking: 1 coal 1/4 tsp ghee Chutney: 1 cup coriander with tender stems 1/2 cup mint leaves 1 inch ginger 3 small red chillies 5 cashews 1 1/2 tbsp raisins 1 tsp cumin seeds 1/2 tsp black salt 1/2 tsp salt 3 tsp lemon juice 2 tbsp cold water 2 tsp mustard oil Garnish: salad leaves shredded coconut pickled onions Method Blend together channa dal, corn and shredded coconut. Once blended, add the fresh breadcrumbs, ginger, green chili, onion and spices. Knead the dough thoroughly. If the dough feels too wet, add one more slice of coarsely ground bread. Shape the dough into a mound and create a hole in the center. On top of that hole, place a piece of onion and a hot coal. Add ghee on top of the coal and cover the entire dough so that it becomes infused with a rich, smoky flavor. Add in coriander and mix. Using an ice cream scoop or a spoon, divide the dough into even sized balls. Shape the balls into cylindrical shape, about 3 inches long on a wooden skewer. Heat oil. Fry the kebabs into the oil by sliding them off the skewer. Fry the kebabs three to four at a time for 3-5 minutes on medium heat until golden brown and crispy. Make sure to not overcrowd the pot. Blend all ingredients except for mustard oil and make the chutney. Lastly add in oil. Serve kebabs on a bed of salad leaves with chutney.
