Ok guys here I have decided to make my simple non-complicated version of Mutabel which is very similar to Baba Ganoush due to the same base of roasted or baked eggplant but differ slightly in ingredients. One most important ingredient used in making mutabel is tahini which Baba ganoush does not have. Moutabel is a bit less complex with simple ingredient like tahini, olive oil and garlic.I like to add Labneh almost like sour cream that's gives the eggplant a nice, creamy rich flavor plus I love the silky texture it adds to the Mutabel. You can garnish it with what ever you like I have used watercress leaves with pomegranate, parsley, cherry tomatoes and balsamic vinegar. So options are unlimited, whatever you fancy at the end of the day. INGREDIENTS: 3 eggplants 1/4 cup Tahini 1 tbsp Labneh 1 tbsp garlic paste 1/2 tsp sumac powder 3 tbsp olive oil Rock Salt for taste Instructions: 1. Wash the eggplants and pat dry. 2. Make a few incisions on the eggplant, Place aubergines on the baking sheet or an oven grill and bake in a preheated oven 30 minutes, or until soft. 3.Once cooked set the eggplants on a side until cooled down and then Scoop the seed pouch first if any to avoid bitterness and then the flesh from the skin. 4. Once all the flesh has been removed go-ahead and mush the puree with your knife or a fork i don't like to use a processor cause i like my Puree to have a nice thick chunky consistency . 6.Add all the ingredients the garlic paste, tahini, sumac and Labneh to the puree and give it a good wipping . 7.Top it with some olive oil and any garnish you prefer like parsley, tomatoes or balsamic vinegar. 8.
