I’m going to make PURPLE YAM MOCHI MOONCAKE today. The filling is made from fresh purple yam. It just tastes so good! The cake is soft even after storing it in the fridge for 2-3 days. So let’s make it! Ingredients for the filling: 150g purple yam 1/3 cup water 45g condensed milk 55g coconut cream 20g wheat starch (you can use corn starch) Ingredients for the Mochi: 23g glutinous rice flour 23g rice flour 25g wheat starch (you van use corn starch) 35g icing sugar Milk (or water) 22g condensed milk 23g melted coconut oil 25g cooked glutinous rice flour for coating the Mochi and the mold. (Cook the glutinous rice flour on a pan until it turns to light yellow. Keep mixing the whole time so it won’t get burnt) As always, happy baking everybody!
