Today, I will share what has become my favorite Keto breakfast recipe inspired by my all time favorite Hawaiian Loco Moco. The Hawaiian recipe is made with a lot of rice and traditional gravy and being on the Keto diet, I had to make my own low carb version of it. For 8 patties, you will need: 1 pound of ground pork or beef 1 teaspoon of Himalayan salt ¼ a cup of shredded Parmesan cheese ½ a teaspoon of dried savory ½ a teaspoon of black pepper 1 teaspoon of garlic powder 1 egg ½ a cup of room temperature water For 4 servings of mushrooms, you will need 2 large Portabella mushrooms For 4 cauliflower rice servings you will need: 2 bags of frozen cauliflower or 2 heads of freshly shredded cauliflower 4 cloves of garlic 1 teaspoon of Himalayan salt ½ a teaspoon of black pepper 1 teaspoon of dried dill Recipe for 4 servings of my Keto/flourless gravy: • KETO GRAVY - FLOURLESS GRAVY RECIPE WITH B... For 8 servings, use 1 pound of ground pork or beef. Add 1 teaspoon of Himalayan salt, a ¼ of a cup of shredded Parmesan cheese, ½ a teaspoon of dried savory (or any herb you might like on your patties), ½ a teaspoon of black pepper, 1 teaspoon of garlic powder, one egg and ½ a cup of room temperature water. Once you add all the ingredients, spent about 2 minutes mixing everything well together. When done, cover the ground meat with seran wrap and let it sit in the refrigerator for half an hour. To fry the patties, in a large pan add half a cup of avocado oil and set the burner between medium and high. While the oil is heating up, start forming the patties and you should have enough for 8 of them if you take chunks the size of a lemon and flatten them until they are as thick as a regular burger patty. Set a bowl of water next to you and keep getting your palms wet, so the parries don’t stick to your hands. Once the oil has heated up, fry the patties for about 5 to 6 minutes on each side. Next, the mushrooms. For 4 servings, I am using 2 large Portabella mushrooms chopped into small cubes. To sauté them, preheat half a cup of Avocado oil under medium heat and add salt and black pepper to taste. Sauté the mushrooms covered for 10 minutes and slightly uncovered for another 10 minutes. As a substitute for rice, I am using 2 bags of frozen cauliflower from Costco. For 4 servings of it, you will need 2 heads of shredded cauliflower if you are using the freshly bought one. First, you will have to sauté 4 cloves of freshly sliced garlic. I am using this wonderful little gadget that makes peeling garlic a breeze. Amazon link for the garlic gadget: https://amzn.to/3gHEnzU After the garlic cloves are peeled, slice them thinly, then add some more avocado oil to the same pan where we just cooked the mushrooms and preheat it under medium heat. I am using the same pan because the flavor of the mushrooms mixes very well with the cauliflower rice. When the oil is preheated, sauté the garlic for about a minute, or until it starts getting some color. Next, add the 2 bags of frozen cauliflower, add 1 teaspoon of Himalayan salt, half a teaspoon of black pepper, 1 teaspoon of dried dill and sauté it uncovered for 20 minutes between medium and high while stirring it frequently. Next, refer to the keto gravy recipe above. The final step of this delicious Keto style Loco Moco is the over easy egg.
