Here is a short video showing how to top up an oak barrel with wine. If you are storing wine in a barrel, you will lose about one to two bottles worth of wine per month due to the alcohol and water evaporating through the pores of the oak. This is expected and will help to concentrate the great characteristics of the wine in a similar way that a reverse osmosis membrane does. Even an old but healthy wine barrel can be helpful because of this concentration effect. To top up the barrel, you should use a similar wine whether it is storebought bottle or a bottle that you have made from a previous vintage. This is also a good time to add sulfites if you need to, by mixing them with the topping wine. The barrel used in this video is a 30 gallon barrel from The Oak Cooperage. The wine in the barrel is an old vine zinfandel from Lodi, California. The grapes are marketed as zinderella and are very good grapes for the price point.
