𝕏 - https://x.com/Ms_LauraAnn Instagram- / laurabakewellyt Japanese Milk Bread Recipe: Makes 2 Loaves 4¾ cups bread flour 1¾ cups milk 2¼ Tbsp granulated sugar 1⅔ Tbsp unsalted butter 2 tsp salt 3⅓ tsp instant yeast In the bowl of your stand mixer, Add your bread flour, milk, granulated sugar, salt, and instant yeast. Using a dough hook, mix until there is no more dry flour, then add the unsalted butter and beat on high for about 10 minutes. The dough will be read when it pulls away from the the sides and the surface is smooth and glossy. Form the dough into a smooth ball and place in a greased bowl. Proof until double in size. This could take 45 minutes-1 hour depending on the temperature of your house or work area. When the dough has doubled in size remove from the greased bowl and divide the dough into 6 equal portions. Roll each portion into a ball and let rest for 15 minutes. I let mine rest on my work surface and covered with plastic wrap to prevent them from getting dry. Once your dough has rested, roll each ball into an oval shape and do letter folds. so the dough will be folded into 3rd, bring one third from the top down, then fold the bottom over that. Then laying it long ways, roll the dough up into a spiral and pinch the seam closed. Place into a greased loaf pan seam side down, repeat with the other dough balls. Placing 3 into each loaf pan. Let rise until the dough comes about 1 inch over the sides. Preheat your oven to 350°F and place the loaves into the oven to bake for 25-28 minutes. The dough will be golden brown with an internal temperature of 200°F. If you want the dough to be shiny, i recommend using an egg wash and egg washing the dough before you put it into the oven.
