Grilled Peach and Prosciutto Crostini Recipe by Nathan Lippy Serves: 8 Time: 10 minutes Ingredients: 2 peaches, cut into wedges 1/2 cup goat cheese crumbles 1 cup arugula 8 slices prosciutto 2 cups balsamic vinegar 8 1" slices of baguette salt and pepper olive oil Action: 1. Drizzle a bit of olive oil and salt and pepper over the sliced peaches and grill over the hottest part of the grill until caramelized on both sides. 2. Drizzle a touch of olive oil and salt and pepper over the baguette slices and grill to toast over the hottest part of the grill. 3. In a small sauce pot, add the balsamic vinegar and simmer until it reduces by 2/3rds. It should look like molasses or maple syrup (thick and velvety) 4. To assemble, add a bit of arugula to each piece of toasted baguette, then add a piece of prosciutto, goats cheese crumbles, the grilled peaches and then drizzle the balsamic glaze over the top. Serve hot.
