In this video you will learn all about retsina (almost 😉). From being known as a cheap wine enjoyed by tourists in Greece it has turned into a hip local high quality wine that goes along well with a variety of food. The ancient amphora (a clay container) is used for the wine-making method where grape juice is fermented with resin from pine trees. It has been made for several thousands of years and is still made in Greece but for a long time most of the retsina has been low quality wine. There is a change now going back to the old traditions of wine-making but also a trend of making the retsina in new ways and from different local grapes. Maria Warming Brink Tsalapati is importing wine from Greece to Denmark and she is explaining about how retsina is made, how it smells and tastes, and what kind of food that goes so well with this type of wine. I meet her in the Botanical Garden in Copenhagen and we are tasting organic natural retsina from Tetramythos wines in Peloponnes along with a classic Greek salad.
