If you’d like to join Obi 🐱 and I as we bake our way through life, don’t forget to subscribe! @TokyoDough —————————— Japanese Strawberry Shortcake Recipe 🍰 4 eggs 130g caster sugar 120g flour 15mL honey 40mL milk 40g unsalted butter 500mL heavy cream 50g caster sugar 2Tbsp vanilla essence Ingredients 🍰 1. Line a 18cm cake tin and preheat the oven to 170C 2. Sift the flour twice 3. Separately warm the honey, butter and milk in a bain-marie 3. In a separate bowl, whisk the eggs and sugar until pale 4. Fold in the sifted flour until incorporated 5. Pour in the cooled honey/butter/milk mixture until glossy 6. Drop the pan a few times to get out any air bubbles 7. Bake for 30-35min 8. Drop a few times to remove any water vapour in the dough 9. Turn it over on a cake cooler. Let it cool completely 10. Lightly brush the syrup over each layer of the cake 11. Whisk the cream, sugar, and vanilla essence until medium peaks form 12.
