Cauliflower Matar Sabji | Smita Deo Recipes Today we’re making a simple yet flavourful Gobi Matar ki Sabzi. This recipe uses an unusual yogurt and coriander masala along with lightly crushed whole spices, which gives the dish a beautiful aroma and depth of flavour. Soft cauliflower and sweet green peas cooked in this fragrant masala make a comforting dish that pairs perfectly with roti or rice. Ingredients: For the Yogurt Mixture: Yogurt – 1½ cups Fresh coriander – 1 large cup, finely chopped Whole Spices (Lightly Crushed) Fennel seeds – 1 tbsp Kalonji – 1 tbsp Methi seeds – 1 tsp Cumin seeds – 1 tsp Mustard seeds – 1 tsp For the Onion Paste: Onions – 3 medium Garlic – 3 large cloves Ginger – 1½ inches Other Ingredients: Oil – 3 tbsp Green chillies – 5–6, slit Turmeric powder – 1 tsp Cauliflower – 1½ kg, cut into florets Fresh green peas – 1½ kg Salt to taste Method: Mix yogurt and chopped coriander in a bowl and keep aside. Lightly pound fennel, kalonji, methi seeds, cumin seeds, and mustard seeds using a mortar and pestle. Keep the texture slightly coarse. Grind onions, garlic, and ginger into a thick paste without adding water. Heat oil in a pan. Add slit green chillies and the onion paste. Sauté till the onions become soft and slightly pink. Add the pounded spices and sauté briefly. Lower the flame and add the yogurt-coriander mixture along with turmeric powder. Cook the masala slowly until it thickens and the oil begins to separate. Add the cauliflower florets and mix well so they coat with the masala. Cover and cook on medium-low flame until the cauliflower is partially cooked. Add the green peas and salt. Mix well, cover again, and cook till the vegetables are tender and the sabzi is ready. Serve hot with roti, paratha, or steamed rice.
