Originally uploaded by Sara #SimplySara on March 17, 2025. 4 cups whole wheat flour (fine ground kind) 1 teaspoon baking soda 1 teaspoon salt 2 tablespoons cold butter, cubed 1 large egg, at room temperature 2 cups of buttermilk 2 to 3 tablespoons oats Preheat the oven to 425°F degrees. Lightly grease a cast iron skillet, and set it aside. In a large bowl mix together the whole wheat flour, baking soda and salt. Add the butter and rub it into the flour mixture with your fingertips until it resembles course bread crumbs. In a separate medium sized bowl, whisk the egg and buttermilk together well. Make a well in the center of the flour and pour in the buttermilk, you might not use it in all so do alittle bit at a time. Using your hands bring the flour and liquid together to make a loose dough. The dough should be quite soft and a bit sticky. If your dough is a little dry then add a splash more buttermilk. Turn the dough onto a floured work surface and bring the dough together in a ball, and knead it for about 2 to 5 minutes. Shape it into a nice ball, but flatten in alittle. Then place it in the grease skillet, now lets bless the bread with a sharp serrated knife make a deep cross cut on top of the bread. Now brush top and sides of bread with leftover buttermilk, then sprinkle oats on top and sides of the bread. Bake for 15 minutes at 425°F , then turn down the oven to 400°F then continue to bake for another 20 to 30 minutes more. When done, the loaf will sound slightly hollow when tapped on the bottom. Remove carefully from skillet and place on a wire rack to cool. Once cooled, slice the bread and enjoy with butter.
