Raxo is a traditional Galician dish made with marinated pork loin, usually served with fried potatoes and Padrón peppers. In this version, I've tried to stick to the traditional raxo recipe, but many variations are possible depending on the region. If you don't have Padrón or Padrón-style peppers, you can use fried Italian peppers; ultimately, it's about working with what you have at home. You've been asking me a lot lately to post traditional recipes from Galicia, and it's always a pleasure for me to be able to share recipes from my homeland. This one in particular has been one of my favorites since I was a kid. I hope you like it too! 📝 INGREDIENTS (serves 2): ▪️700-800g fresh pork loin ▪️5-6 garlic cloves ▪️50ml white wine ▪️50ml extra virgin olive oil ▪️Salt and black pepper to taste 🔸Marinate for at least 4-5 hours, although ideally, leave it overnight in the refrigerator.
