This vegan curry recipe is not only (Vegetarian) Ingredients: 2 cups cauliflower (gobhi), finely chopped or grated 1 cup green peas (matar) 1 medium onion, finely chopped 1 medium tomato, finely chopped 2 tbsp oil 1 tsp ginger-garlic paste ½ tsp turmeric powder 1 tsp red chili powder (adjust to taste) 1 tsp coriander powder ½ tsp garam masala Salt to taste Fresh coriander leaves, chopped Method: Heat oil in a pan. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and sauté for 1 minute until aromatic. Add tomatoes and cook until soft and oil starts to separate. Add turmeric, red chili powder, coriander powder, and salt. Mix well. Add finely chopped or grated cauliflower and green peas. Mix properly. Cover and cook on low flame for 8–10 minutes, stirring occasionally. Once the vegetables are cooked, add garam masala and mix well. Garnish with fresh coriander leaves and turn off the heat.
