Ingredients :- For Dhokli Dough :- 1 cup - Whole wheat flour 1 tbsp - Besan or gram flour To taste - Salt 1/4 tsp - Asafoetida 1/2 tsp - Turmeric powder 1 tsp - Red chilli powder 1 tsp - Coriander - cumin powder 1/4 tsp - Carrom seeds 2 tsp - Cooking Oil As required - Water For Dal :- 1/2 cup - Toor dal (uncooked) 1/4 tsp - Fenugreek seeds 1/2 tsp - Turmeric powder To taste - Salt 600 ml - Water 2-3 tbsp - Jaggery 3 tsp - Tamarind pulp For flavourful water:- 300 ml - Water 1/4 tsp - Turmeric powder 1 tsp - Red chilli powder 1/2 tsp - Salt 1 tsp - Coriander - cumin powder 1 tbsp - Ginger - green chilli paste 1 small size - Chopped tomato 2 tbsp - Coriander stems 2 tbsp - Raw peanuts For tempering :- 2 and 1/2 tbsp - Ground nut oil or ghee 1/4 tsp - Mustard seeds 1/4 tsp - Cumin seeds 1/8 tsp - Fenugreek seeds 2 nos - cloves 1 inch - cinnamon stick 2 nos - Whole dried red chillies 8-10 - Curry leaves Pinch of - Asafoetida 1/8 tsp - Red chilli powder Chopped coriander leaves and cold pressed ground nut oil (optional) or ghee 1 tsp for garnishing. Method :- Firstly soak toor dal for about 30 minutes. Then pressure cook it along with required water and fenugreek seeds for about 3 whistles. When cooled completely.... blend it and then transfer it to a deep heavy bottomed vessel. Add salt, turmeric powder and 600 ml of water. Keep it aside. Meanwhile for the dough....mix all the mentioned ingredients together and form semi soft dough in a bowl. Grease with some oil over the surface of dough . Cover it and allow to rest for 10 minutes. Now take the prepared dal mixture boil it for 10 minutes on low flame. Meanwhile for flavourful water...add all the mentioned ingredients of it in a vessel and boil it for 15 minutes on low flame. Now after 10 minutes.. the dough have rested. Divide the dough into 4 portions. Roll each piece into circle of medium thickness. Cut the circle into diamond or square shape. Then add these dhokli into boiling dal mixture...cook it for 8-10 minutes on low flame. Now add the flavourful water in it...mix well and cook everything for 7-8 minutes on low flame. Lastly add jaggery...mix well. For tempering... take oil in a pan, heat it and add mustard seeds, cumin seeds, fenugreek seeds, cloves, cinnamon stick, whole dried red chillies, curry leaves, asafoetida and red chilli powder... pour this tempering over the prepared dal. Lastly add tamarind pulp and coriander leaves. Drizzle with ghee or ground nut oil.
