Hey everybody, and welcome to another episode of Sunday Cooking with Mom and Me. Today Mom is going to show us how she makes Blueberry Muffins with the crumbling topping. These muffins are amazing. You would have sworn you bought it straight out of a bakery. Check out the recipe below. 1.5 cups all-purpose flour 3/4 cup sugar 1/2 teaspoon salt 2 teaspoons baking powder 1/3 cup vegetable oil 1 egg 3/4 cup milk 1 teaspoon vanilla extract 1/2 teaspoon lemon extract or (the zest of one lemon and the juice of 1/2 lemon) 1 cup frozen blueberries Combine dry ingredients in a bowl. Mix together with a spoon. Combine wet ingredients in a bowl. Mix. Combine dry ingredients with wet ingredients. Fold in blueberries. Spray muffin cups. Pour batter into muffin pan. Crumb topping 1/2 cup sugar 1/3 cup all-purpose flour 4 tablespoons semi softened butter 2 teaspoons ground cinnamon Work mixture with fork until crumbly, sprinkle over top of muffins. Bake in preheated 400-degree Fahrenheit oven for 23 minutes.
