Vendakkai Theeyal is Kerala dish made with Vendakkai (Ladies finger), coconut and tamarind. This theeyal is served with hot rice accompanied by fried papad. Ingredients Okra (Vendakkai) – 10-15 Tamarind – a lemon size Half onion To fry and grind: Coconut gratings – 1 cup Red Chilli powder – 1/2 teaspoon Coriander powder– 1 tablespoon Turmeric Powder – ¼ teaspoon Half Onion For tempering Oil – 1 tablespoon Mustard – ½ teaspoon Red Chillies – 2 Chopped Onion – 2 tablespoons Curry Leaves – few Salt – 1 teaspoon or as per taste Directions 1.Wash the okra/ladies finger and wipe it with a clean cloth or paper towel. Cut it into 2 inch long pieces. 2. Soak tamarind in little water and squeeze out the juice. Add enough water. 3. Heat the pan, add grated coconut and onion and fry till it becomes golden brown. 4. Add turmeric powder, chilli powder, coriander powder and stir it well. Remove and cool it. 5.Put all the fried ingredients into a mixie jar and grind it to a fine paste. 6. In a thick bottomed vessel put one teaspoon oil and add okra pieces, onion along with a pinch of salt. Stir fry till light brown spots on the okra. 7. Add tamarind water,and allow to boil on medium flame. Add ground paste along with little water and mix it well. Boil the Theeyal for 2 mins and turn off the flame. For tempering -In a small kadai add the oil and when it is hot add mustard. When it starts crackling add chopped onion, red chillies and curry leaves. Fry for few seconds and add this tempering to Theeyal.
