Chicken and Rice Savor the ultimate One-Pot Chicken and Rice! This easy, flavorful meal features crispy chicken thighs and creamy umami rice. Perfect for busy weeknights, this hearty comfort food recipe is a delicious, foolproof dinner the whole family will love! Ingredients: • 1-1 ½ lb (450 – 675g) boneless chicken thighs – skin on • Seasoning of your choice for chicken • 1 cup (200g) white long grain rice – washed thoroughly l • 1 Tbs (18g) salt • 1 tsp (2g) pepper • 1 tsp (2g) McCormick Umami seasoning - optional • 1 Tbs (20g) powdered chicken bouillon • 1 tsp (2g) paprika • 1 tsp (2g) basil • 1 medium onion diced • 2 cloves garlic • 1 10oz (30ml) can condensed cream of mushroom soup • 1 10oz (30ml) can condensed cream of chicken soup • 1 cup (240ml) chicken stock or broth – water will work • ½ lb (225g) mushrooms sliced – optional • 1 small bag frozen vegetables- your choice - optional • Your preferred cooking oil. Directions: 1. Season boneless chicken thighs on both sides with your favorite seasoning. Salt, pepper, cajun, italian, it truly doesn’t matter. Let marinate for at least 2 hours, overnight preferred. 2. In a large oven safe skillet, add a few tablespoons of oil and heat on medium. If you do not have an oven safe pan use any skillet you have. When oil is hot place chicken skin side down and cook until skin is crispy and dark golden. Do not flip. Remove from pan and set aside. You do not want to cook all of the way through. 3. Preheat oven to 350°F/175°C 4. With pan on medium add onions and cook until onions are becoming carmelized and brown. Add garlic and cook for an additional minutes. 5. Add rice to pan and cook for 2 to 3 minutes until rice just starts to change color. Remove from heat. 6. Add both soups and stock, bouillon, Umami seasoning. paprika, and basil and stir to combine thoroughly. Salt and pepper to taste. 7. Add mushrooms and bag of frozen vegetables and stir to combine. 8. If you are using a oven safe skillet smooth out rice and lay chicken on top skin side up. If not use a buttered 9x13 pan and pour rice mixture in, smooth out and place chicken skin side up. 9. Cover pan tightly with aluminum foil and place in oven for 1 to 1 ½ hours until rice is done checking after the first hour. When done let cool for just a few minutes and Enjoy!
