How-To Recipe Ingredients 450 g Anil instant ragi vermicelli Hot water (enough to soak vermicelli) 1–2 tsp coconut oil (or regular cooking oil for greasing) Sweetened coconut milk / chutney / veg kurma (for serving) Method Soak Vermicelli Place instant ragi vermicelli in a large bowl. Pour hot water over it and mix gently. Cover with a lid and let it sit for 2 minutes. The vermicelli will soften and strands will separate. Prepare Steamer & Moulds Lightly grease steel cups/katoris (or bowls lined with banana leaf) with coconut oil. Fill them gently with the soaked ragi vermicelli, handling carefully to avoid breaking strands. Steam the Idiyappam Place the cups in a steamer or idli stand. Steam for 8–10 minutes until cooked through. You’ll know they’re ready when the strands don’t stick and color changes slightly. Unmold & Serve Remove from the steamer and un mold gently.
