Aloha Fit Friends! This recipe makes 8 and a half litres of Quinoa Veggie Tomato Soup (roughly 17 servings) 1 tbs Coconut oil 2kg peeled and chopped carrots 6 brown onions 1 big bunch celery 3 veggie stock cubes 3 tins of 800g Italian chopped tomatoes 500g cooked quinoa 3 tins of 400g mixed beans Large bunch of parsley Once cooked, it can be stored in the fridge for up to 4 days. You can also freeze individual portions for up to 2 months. 1. Start with melting 1 tbs of coconut oil over a medium heat. 2. Add 2 kg of peeled and chopped carrots 3. Add 6 diced onions 4. Add large bunch of chopped up celery 5. Stir the vegetables for around 5 minutes. 6. Turn up the heat and add water until the pan is just over half way full. 7. Once water starts bubbling add 3 veggie stock cubes and 3 large tins of chopped Italian tomatoes. 8. Taste and add more seasoning if required 9. Reduce heat and leave soup to simmer 35 mins in uncovered pot. 10. Cook quinoa and to soup together with rinsed beans. 11. Add chopped fresh parsley and ENJOY!! Music by my friend DJ Alan Sneddon.
