A budget-friendly recipe with a surprise twist of peanut butter! This is such a tasty, healthy, one-pot meal that is easily served over rice. You can add shredded cheese, tortilla chips, or sour cream for a yummy topping. Ingredients: 1 lb ground beef (or 2 cans black/kidney beans drained for vegetarian & cheaper), 1 medium onion, diced, 2-3 garlic cloves, minced (or 1 tsp garlic powder), 1/2 cup red bell pepper, chopped (or any type you prefer), 2/3 cup corn (can be canned, fresh or frozen), 1 14.5oz can of diced tomatoes with juice (regular or fire roasted), 1 14.5oz can tomato soup or tomato sauce, about cup of water or broth if needed, 1 14.5oz can of kidney beans or black beans, drained. 2 Tbsp chili powder, 1 tsp cumin, 1 tsp smoked paprika (optional but makes it really good!), 1/2-1 tsp cayenne if you like HOT or red pepper flakes (I used 1/4 tsp), salt and pepper, 2 Tbsp creamy peanut butter (no sugar added). Interesting option: Add a splash of coffee (deepens flavor). In a large dutch oven over medium heat, brown the ground meat (or just saute onion if using beans). Add diced onion and garlic, cook 3-4 minutes until soft. Add red pepper and corn, cook for a few more minutes. Stir in chili powder, cumin, smoked paprika, cayenne, salt, and pepper. Cook 1 minute to bloom all the spices. Add in diced tomatoes, tomato soup or tomato sauce, and optional black coffee (I didn't use it this time). Bring to a simmer. Reduce heat to low/simmer for 20 minutes, stirring occasionally. Taste and adjust seasoning. Turn off heat and stir in the 2 heaping Tbsps of peanut butter. Stir until melted and creamy. Serve hot and enjoy!
