By definition "Poaching" is the cooking techniques where the ingredients are cooked on gentle heat submerged in a liquid without addition of fat. I've addressed this issue twice , that cooking chicken breast is not difficult if you keep a few things in mind. This is our third recipe in this context the other two being the "Quick Stir fry" And "Fajita" Do check them in case you need links, comment and I'll send them. But here we address the delicate cooking method of poaching. The poached chicken is great to make this velvety chicken mousse or and also by itself for sandwiches, salads and tossing into sauces. It's very neutral and can adapt to any sauce or spice well. This recipe is great as a dip, a sandwich spread, a topping or even as a salad dressing. Feel free to add ingredients to it and treat it like a Mayo substitute too. Let us take this conscious eating to a gourmet level. If chilled you can even pipe this!!! I have used hung curd and some cheese, it could be either or both or any one too, feel free to change the flavor profile , add herbs, your creativity is your biggest asset.
