Weddings in Lucknow are not just about uniting two people but about celebrating tradition, culture, and of course, food. This time, we had the privilege of attending the Dawate Walima celebrations of two newlywed couples—Yasub & Sakina and Nida & Amber. These grand feasts, deeply rooted in Awadhi heritage, bring families and friends together over an elaborate spread of meticulously prepared dishes. What made these feasts even more special was that the head chefs at both weddings were two brothers—Mohd. Arik and Arshi—culinary maestros who belong to a family that has been perfecting the art of Awadhi wedding feasts for six generations. Their reputation precedes them, with families who take pride in hosting grand meals placing their trust in their expertise. Through their craft, they have kept alive the rich culinary heritage of the region. We visited both venues to witness the massive preparations taking place behind the scenes. Lucknowites are known for their deep appreciation of good food, so everything had to be executed with precision. Arik and Arshi took charge of the entire process, supervising every step, from marination to the final presentation. As they worked, they explained the intricate details of an Awadhi dawat, and we followed them through the making of some of the most iconic dishes—shahi tukda, sheermal, raan musallam, fish musallam, galouti kebab, and mutton pulao. Watching these dishes come to life firsthand was a true revelation of the expertise, passion and relentless hard work that goes into creating an unforgettable feast. As evening set in, guests started arriving, and we began our culinary journey at Yasub and Sakina’s wedding venue. There, we had the privilege of tasting raan musallam, fish musallam, and galouti kebab right at the cooking area, in the company of the chefs. Later, we joined the guests to enjoy a delicious spread of rich qorma paired with soft, fragrant naan. Every dish was a testament to slow cooking, perfected over time, and brimming with complex flavors. Next, we made our way to Nida and Amber’s wedding feast. The spread was equally magnificent, starting with galouti kebabs, chicken tikka, and chicken reshmi kebabs. For the main course, we indulged in rogan josh, lagan ka murgh, and the ever-fragrant mutton pulao. The feast ended on a sweet note with decadent shahi tukda and refreshing kulfi—each bite a delightful blend of tradition and indulgence. Beyond the remarkable food, what stood out was the warmth and generosity of the hosts. And as we relished each dish, we realized that in Lucknow, feeding people is not just a custom—it’s a cherished tradition, upheld with pride and passion. Mezbaan Catering Services, Lucknow.
