You guys asked for make-ahead school lunch ideas: voila! These Ham & Cheese Muffins are a delicious, make-ahead version of ham & cheese sandwiches that can be stored in the freezer. Subscribe! / onehungrymama The batter for these couldn't be any easier. It's a very basic muffin made in two medium bowls: one for wet ingredients, the other for dry. Then you fold in grated cheese (shredded store-bought is fine!) and diced deli ham. That's it! Make a big batch and throw them in the freezer for anything you need a quick lunch. HAM AND CHEESE MUFFINS Makes 1 dozen muffins 2 cups all-purpose flour 2 tablespoons sugar 1 tablespoon baking powder 1 teaspoon salt 2 eggs, beaten 1 cup milk 1/4 cup (4 tablespoons) unsalted butter, melted & slightly cooled 1 cup shredded cheddar cheese, plus more for garnish 1/2 cup diced ham (about 6 deli slices) Fresh black pepper, for garnish (optional) 1. Preheat oven 400 degrees F. Line a 12-cup muffin tin with paper or silicone muffin cups and set aside. 2. In a medium bowl, whisk together flour, sugar, baking powder, and salt. 3. In a separate bowl, combine egg, milk, and butter. Add these wet ingredients to the dry and mix lightly (e.g., with a wooden spoon, not a mixer) until well combined. Once the batter is smooth, fold in cheese and ham. 4. Spoon batter into muffin cups, filling them about 3/4 of the way. If you like, sprinkle some more shredded cheese and freshly cracked black pepper on top. Bake for about 17 minutes or until a toothpick inserted into the center of the muffin comes out clean.
