Chef John’s Menemen • Menemen (Turkish Scrambled Eggs) | Food Wi... 4 Tablespoons butter, divided 1 yellow onion, diced 1/2 bell pepper, diced 1 Hungarian pepper, finely diced (optional) 2 garlic cloves, sliced 1 Lb tomatoes, blanched, peeled, and diced 2 tsp Turkish pepper paste (optional) 2 Tablespoons olive oil 2 oz shredded cheddar 4 eggs 1 scallion, sliced 1/4 cup chopped cilantro, dill, parsley, mint, or basil Set a 10 inch skillet over medium heat. Add 3 Tablespoons of butter. When the butter melts, add the onion and both peppers. Season with salt, stir, cover, and cook, stirring occasionally until the onions are translucent and completely tender. Stir in the garlic and cook, stirring occasionally until aromatic. Add tomatoes, pepper paste, olive oil, and salt. Stir, cover, and cook, stirring occasionally until tomatoes break down into a sauce. Taste and correct for salt. Reduce the heat to medium-low. Sprinkle on half the cheese. Crack the eggs on top. Season with salt and pepper. Add another tablespoon of butter and scramble the eggs with a flat edged spoon. When the mixture thickens, but it’s clumpy yet, taste and correct for salt. Take off heat, sprinkle on the rest of the cheese, scallions, and herbs. Cover and let rest for 5 minutes.
