Ingredients For Dough: 2 cups whole wheat flour Salt to taste 1 tsp oil or ghee Water as required (to knead soft dough) For Paneer Stuffing: 1½ cups grated paneer (Indian cottage cheese) 1 small onion, very finely chopped 1–2 green chilies, finely chopped 2 tbsp fresh coriander leaves, finely chopped ½ tsp red chili powder ½ tsp garam masala ½ tsp roasted cumin powder ½ tsp dry mango powder (optional) Salt to taste For Cooking: Ghee or oil as required Method Prepare the Dough: In a large bowl, add whole wheat flour, salt, and oil. Mix well. Gradually add water and knead into a soft, smooth dough. Cover and let it rest for 10–15 minutes. Prepare the Stuffing: In a mixing bowl, add grated paneer. Add finely chopped onion, green chilies, and coriander leaves. Add salt, red chili powder, garam masala, roasted cumin powder, and dry mango powder. Mix everything well until evenly combined. Make sure the stuffing is not too wet. Shape the Paratha: Divide the dough into equal portions. Roll one portion into a small circle. Place 2–3 tablespoons of stuffing in the center. Bring the edges together and seal properly. Gently flatten and roll it again into a medium-thick paratha. Cook the Paratha: Heat a tawa (griddle) on medium flame. Place the rolled paratha on the hot tawa. Cook for a few seconds, then flip. Apply ghee or oil on both sides and cook until golden brown and crisp. Serve Hot: Serve with butter, curd, pickle, or green chutney.
