Hello, I'm Shogo, a professional chef living in Osaka. Today begins with a peaceful morning stroll through Sumiyoshi Taisha, one of Japan’s oldest shrines with over 1,800 years of history. Since moving to Osaka in January 2026, finding these spiritual spots has been the perfect way to clear my mind before heading to the kitchen. Today's bento features Spicy Buffalo Wings made with chicken wing tips—bold, tangy, and perfect with rice! I’m also serving them with a refreshing Harusame (Glass Noodle) Salad and a classic Dashi-maki Tamago. For the onigiri, I’m using the Simmered Leaf Burdock I prepared in my previous video. It’s a seasonal delicacy here in Osaka! 🥢 Missed the Leaf Burdock recipe? Watch it here: https://youtu.be/-8HSWB4GWMIhttps://y... Spicy Buffalo Wings ・Chicken wing tips : 5–6 pcs ・Butter: 1 knob ・Coating: Salt, Black pepper, Flour Sauce: ・Ketchup (3 tbsp), ・Vinegar (2 tbsp), ・Honey (1 tsp), ・Onion: 1/4 (minced) ・Minced garlic Spices (To taste): Tabasco, Cumin, Garam Masala (or Curry powder), Paprika powder 2. Classic Dashi-maki ・Eggs: 2 ・Water: 60cc ・Hondashi (Dashi powder): 1 tsp ・Potato starch (Katakuriko): 1 tsp ・Soy sauce: 2 tsp ・Mirin: 1 tsp 3. Harusame & Pea Shoot Salad ・Glass noodles (Harusame): 30g ・Pea shoots (Toumyou): As needed ・Canned tuna: 1 can ・Ponzu (2 tbsp), ・Sesame oil (1/2 tsp), ・Soy sauce (a dash), ・Sesame seeds [Chef's Tips] Chicken Wings: Scoring along the bone not only makes them easier to eat but also ensures the spices penetrate deep into the meat. Dashi-maki: Using a bamboo mat (makisu) while the egg is still warm allows you to create a beautiful, professional shape. Glass Noodle Salad: Rinsing the noodles in cold water after boiling keeps them chewy and prevents them from sticking together.
