Chicken Vegetable Kababs – Healthy, Flavourful & Crispy 🤍 These Chicken Vegetable Kababs are packed with goodness of fresh vegetables, tender chicken and perfectly balanced spices. They are healthy, shallow-fried, super flavourful and make a perfect snack, iftar item or tea-time treat. An easy, simple and wholesome kabab recipe that is crispy from outside and soft from inside. You’ll definitely love these Chicken Vegetable Kababs ❤️ Ingredients: For Kababs: Potatoes – 1 kg (boiled & mashed) Boiled & shredded chicken – 1/2 kg Cabbage (band gobhi) – 250 g Capsicum (shimla mirch) – 4 medium (thin julienne cut) Onion – 2 medium (chopped & squeezed) Fresh coriander & mint – half bunch Green chillies – 4 (chopped) Crushed red chilli – 2 1/2 tsp Salt – 1 1/2 tsp or to taste Turmeric powder – 1/2 tsp Cumin powder – 1 1/2 tsp Garam masala – 1 tsp Black pepper – 1 tsp Chicken powder – 2 tbsp White pepper powder – 1 tsp Chaat masala – 1 1/2 tbsp Lemon juice – 2 tbsp Eggs – 3 (beaten) Breadcrumbs – as required Oil – for shallow frying For Green Chutney Raita: Yogurt (dahi) – 250 g Fresh coriander – 1 handful Fresh mint – 1 handful Green chillies – 5 Garlic cloves – 2 Small onion – 1 Black salt – 1 tsp Roasted whole cumin (sabut zeera) – 1 tsp Lemon juice – 1 tbsp Water – 2–3 tbsp (for blending) Method: In a large bowl, add boiled & mashed potatoes. Add cabbage, capsicum, onion, green chillies, fresh coriander, mint and shredded chicken. Now add all the spices: crushed red chilli, salt, turmeric, cumin powder, garam masala, black pepper, chicken powder, white pepper powder, chaat masala and lemon juice. Sab cheezon ko bohot achi tarah mix karein till everything is well combined and flavourful. Ab mixture se equal size balls bana kar kabab shape dein. Ek plate ya tray ko halka sa oil se grease kar lein aur saare kababs us par rakhte jayein. Is mixture se approx 24 kababs ban jayenge. Ek bowl mein 3 eggs achi tarah beat kar lein aur ek plate mein breadcrumbs nikaal lein. Frying pan mein thora sa oil heat karein (shallow frying). Har kabab ko pehle egg mein dip karein, phir breadcrumbs se coat karein. Medium to high flame par shallow fry karein. Jab ek side golden brown ho jaye, tab carefully flip karein aur doosri side cook karein. Flip jaldi na karein warna kababs toot sakte hain. Dono sides golden hone par kababs ko paper towel par nikaal lein taake excess oil absorb ho jaye. Green Chutney Raita Method: Grinder mein add karein: coriander, mint, green chillies, garlic, onion, 3tbsp Dahi, black salt aur 2–3 tbsp water. Blend till smooth. Ek bowl mein dahi nikaal kar usmein blended chutney add karein. Ab sabut zeera aur lemon juice add kar ke achi tarah mix karein.
