In today’s episode of Seasoned by Siddharth, we’re making a creamy, vibrant basil pesto from scratch and tossing it with perfectly cooked penne. This recipe uses fresh basil, parmesan, cashews, garlic and olive oil to create a smooth, rich pesto that coats every piece of pasta beautifully. We also sauté cherry tomatoes, herbs and garlic to add depth and a burst of freshness — ending with lemon zest, lemon juice and shaved parmesan for that final gourmet touch. Whether you're a pasta lover or trying pesto for the first time, this recipe is simple, flavour-packed and restaurant-worthy. Try it and tell us how it turned out! 📝 Ingredients Penne Pasta – 150 g Basil Leaves – 100 g Garlic – 4–5 cloves Olive Oil – 2 tbsp Cashewnuts – 8–10 Parmesan Cheese – 50 g Cherry Tomatoes – 8–10 Salt & Pepper – to taste Lemon – 1 👨🍳 Method 1️⃣ Blanch the Basil Start by blanching the basil leaves to keep the pesto bright green. Dip them in cold water, then hot water for 10–15 seconds, and immediately return them to cold water. Strain and set aside. 2️⃣ Prepare the Pesto Base In a mixer, add garlic cloves, cashewnuts, parmesan cheese, and salt. Blend with a little olive oil until it forms a coarse, creamy base. 3️⃣ Add the Basil to Make Pesto Add the blanched basil leaves into the mixture, pour in more olive oil, and blend again until smooth, rich, and aromatic. Keep the fresh pesto aside. 4️⃣ Cook the Penne Pasta Boil salted water, add the penne, and cook until perfectly al dente — firm but cooked. Reserve some pasta water before straining. 5️⃣ Build the Flavour Base Heat olive oil in a pan. Add sliced garlic, mixed dried herbs, and cherry tomatoes. Sauté until the garlic is fragrant and the tomatoes soften. Season well. 6️⃣ Deglaze & Add Pesto Pour in a splash of reserved pasta water to deglaze the pan. Add the prepared pesto and mix until the sauce becomes smooth and glossy. 7️⃣ Combine Pasta & Sauce Add the cooked penne into the pesto mixture. Toss gently so the pasta gets coated evenly. Use extra pasta water if needed for a silky consistency. 8️⃣ Finish with Freshness Add lemon zest, a squeeze of lemon juice, and shaved parmesan.
