How to preserve beetroot so it's ready to go when you've got a burger screaming for it to be added! Bottling your own beetroot is a simple but slightly messy process that's just so strangely satisfying! Feel free to check out my other videos for recipes, budgeting tips, DIY projects, restorations and work we do on our lifestyle block in New Zealand such as beekeeping and chickens etc. Full Method: Chop the tops and bottoms off the beetroot Give them a good wash Put in a big pot, cover with water and boil until you can easily stick a fork through them Once cooked you should easily be able to rub the skin off them by hand (I used gloves as they're hot!). Slice them however you like. Depending on how much you need make up the vinegar solution - you can use white, malt or apple cider vinegar (or a combination!). Boil up with some sugar - you need half as much sugar as you have vinegar (by weight). Once everything is ready, fill hot jars, one at a time with beetroot and top up with the boiling vinegar/sugar solution & secure lid tightly.
