This classic European cheesecake is light, delicate, and incredibly creamy. The texture is almost like a baked soufflé — airy yet stable, rich but not heavy. In this step-by-step recipe, I show you exactly how to prepare the base, mix the filling properly, and bake it so it stays smooth and beautiful without cracking. If you enjoy traditional home baking and simple follow-along recipes, this one is for you. Let me know in the comments how yours turned out! 🥧 BASE (Original full recipe – divide in half) • 1 egg • 100 g soft butter • 120 g sugar • 340 g flour • 1 tsp baking powder Base Preparation Cream butter and sugar until smooth. Add egg and mix well. Add flour and baking powder. Mix until combined. Divide dough into two equal portions. • Use one half for this cake. • Wrap the other half flat and freeze for later use. Press evenly into the bottom of the prepared pan. No side crust needed. 🧁 FILLING • 450-500 g sour cream (14% milk fat) • 250 g buttermilk • 4 eggs • 240 g sugar • 1 package European vanilla pudding powder (Reduce sugar slightly if pudding mix is sweetened) Filling Preparation Combine sour cream, buttermilk, eggs, and sugar. Mix until smooth. Add pudding powder. Mix again. The filling will be very liquid — that is correct. 🥣 ASSEMBLY Slowly pour filling over base. Tap pan gently once to release air bubbles. 🔥 BAKE 350°F / 175°C Bake about 80 minutes, until the top turns golden brown. Top should be golden. Cake will sink slightly while cooling — completely normal. Let cool completely in the pan. 🍫 TOPPING • 250 g whipped cream • Dark chocolate, finely grated Spread whipped cream evenly. Grate chocolate over top. If using a 9"x9" square pan → leave cake in the pan and serve from there.
