This is part two in a three-part series.  Starch is a bunch of glucose molecules stuck together. It's basically concentrated sugar. It breaks down a little slower than pure sugar, but it will still raise insulin.  When you combine protein and sugar or a protein and starch, you actually get an exaggerated spike in insulin—more than if you ate these separately. It may be best not to have protein with starches or sugar.
