Hummus is an incredible healthy vegan snack that can be eaten with anything, whether it's bread or veggies. This recipe works well because you make a flavour-packed base by whipping lemon juice and tahini together first. This flavour then combines with the chickpeas to give you a truly creamy, delicious hummus. ------------ RECIPE Ingredients 1 can of chickpeas (apx 16oz) 1 medium lemon 1/4 cup tahini 2 garlic cloves 1 tsp cumin 1 tsp kosher salt or 1/2 tsp table salt Leftover chickpea water 2 tbsp Olive Oil Garnish: Sumac and parsley Directions 1. In a food processor, pour in the tahini & lemon juice. 2. Process for 30 seconds. Scrape the sides inwards. Process for another 30 seconds. Repeat 2 more times. 3. Add garlic (crushed), olive oil, cumin and salt. Repeat Step 2. 4. Drawn the chick peas through a sieve. SAVE THE WATER. It’s liquid gold. 5. Add half of the chick peas and blend for 1 minute. 6. Scrape the sides and pour in the rest of the chick peas, then process. 7. Slowly drizzle chick pea water you saved until hummus is smooth. 8. Pour into a bowl, cover and refrigerate for at last an hour or two. 9.
