Ingredients 1 medium onion, finely chopped 3 medium tomatoes 2 eggs Salt, to taste ½-1 tsp turmeric ½-1 tsp black pepper 1–2 tbsp oil Instructions Cook the onion Heat oil in a pan over medium heat. Add the chopped onion and cook until soft and translucent. Prepare the tomatoes Bring a small pot of water to a boil. Add the tomatoes and leave them in the boiling water for 2 minutes. Remove carefully and peel off the skins. Slice the peeled tomatoes into thin pieces. Season the onions Add turmeric and black pepper to the softened onions. Stir to coat. Cook the tomatoes Add the sliced tomatoes and salt to the pan, then stir to combine. Cover with a lid and cook over medium-low heat for about 5 minutes, until the tomatoes soften. Remove the lid and gently press the tomatoes with a wooden spoon. Cook for another 5 minutes to reduce excess moisture. Add the eggs Crack the eggs into a bowl and beat with a fork.
