I was looking for a brownie texture that wasn’t just fudgy, but sticky chewy and definitely didn’t want any cakieness to it. Think “Subway cookies” kind of sticky chewy, but with that perfect density you can get from using box mix brownies... 🤤 I NEEDED IT IN MY LIFE!! (And I’ve heard of many people feeling sick after eating box mix so I was really determined to figure it out!) I didn’t get to this end result on my own, it’s important to note. This final product was adapted from 3 different recipes I found online: thekitchenmagpie, lifemadesimplebakes, and tasty. My recipe requires a little extra effort compared to the usual brownie recipes you may find, but personally, soooo worthhh it for that extra sticky finish..!! I'm really soo sooo thrilled with the results, everyone who's tried them so far has said how they're "SOO SOOO GOOOOOD", or "actually amazing", or "omg, you have to make them for me again please!!!". TOOLS REQUIRED: 7.5 inch square baking pan or 12 cup muffin tray INGREDIENTS: 140g unsalted butter 1/2cup (110g) caster sugar (aka superfine sugar) 1 tablespoon + 1 teaspoon of firmly packed dark brown sugar (28g) 90g of your favourite semi-sweet (45% cocoa) dark chocolate 1/2 cup (45g) of dutch processed cocoa powder 1/2 cup (110g) caster sugar 2 large eggs 1 teaspoon of natural vanilla extract 1/2 teaspoon salt 1/2 cup (72g) plain flour 1 teaspoon cornflour (aka cornstarch) PREHEAT to 180℃ Square pan: Bake at 180℃ for 27 minutes *20 minutes (remove and bang air out) plus 7 minutes Brownie cups: Bake at 180℃ for 18 minutes *13 minutes (remove and bang) plus 5 minutes STORAGE and CONSUMPTION: Store in an airtight container for up to 5 days Best consumed at room temperature on the day they are made or within 3 days Brownie cups stay sticky chewy for longer than pan brownies Slightly over baked brownie cups (where when first removed feels crunchy on the edges), somehow got amazingly sticky chewy the day after even when stored in an airtight container. (I don't have an explaination for this, but test it out if you're curious!)
