The Apricot & Almond Impossible Pie is naturally gluten free, and you can swap out the apricots for tinned peaches if you prefer. The Blueberry & Coconut version is rich and creamy and can also be made gluten free. No pastry required! This is the kind of nostalgic dessert many of us grew up with — and funnily enough, after filming, I put on my glasses and read the fine print on the old recipe photocopy… and it turns out it originally came from New Idea magazine, developed by Jane Ash.
