FIG, PLUM & ALMOND TART RECIPE - For the homemade shortcrust pastry (you can buy it ready-made, but homemade is always better): ½ cup (100 g) sugar (brown cane sugar works beautifully) 1 egg 2 cups (250 g) all-purpose flour (organic if possible) 7 tbsp (100 g) unsalted butter, softened Zest of 1 lemon (optional) *For the almond filling: 1 egg ⅓ cup + 1 tbsp (80 g) powdered sugar 1 cup (100 g) almond flour (ground almonds) 6 tbsp + 1 tsp (90 g) unsalted butter, softened *Preparation Make the pastry Take the butter out ahead of time to let it soften. Whisk together the egg and sugar. On a floured surface, place the flour and make a well in the center. Add the egg-sugar mixture, then the softened butter. Bring everything together into a dough ball. Roll out with a rolling pin (rolling between two sheets of parchment paper makes it easier). Line a 28 cm / 11-inch tart pan with the dough. Prick the base with a fork and chill in the fridge while you prepare the filling. Make the almond filling In a bowl, mix the powdered sugar, almond flour, egg, and butter. Use a fork to blend until smooth and creamy. Assemble the tart Spread the almond cream evenly over the chilled pastry base. Preheat the oven to 350°F (180°C). Slice fresh figs into wedges and arrange them decoratively on top. Bake & enjoy Bake for about 25 minutes, until golden.
