Snikerdoodle Cookies 1 cup butter softened, I use half salted and half unsalted. 1 cup granulated sugar 2/3 cup brown sugar 2 eggs 1 teaspoon vanilla 3 cups flour 1/2 teaspoon salt 1 teaspoon baking soda 1/2 teaspoon cream of tartar Topping 8 Tablespoons granulated sugar 4 teaspoons cinnamon Heat oven to 300° cream butter and sugars with mixer until light and fluffy. Add eggs and vanilla. Beat until smooth. In separate bowl, combine the rest of the cookie ingredients. (not the topping ingredients) slowly add dry ingredients into wet ingredients. Mix just until combined. Chill dough for at least one hour or up to overnight. Combine Topping ingredients. Rol dough into about 1 1/2 inch balls. Roll each ball in sugar/cinnamonmixture. lace at least 2 inches apart on parchment-lined cookie sheet. Bake 12 to 14 minutes just until set. they will continue to bake on hot cookie sheet. Do NOt over bake! If you bake them a bit too long, immediately slide the cookies and parchment paper onto cool counter to stop them from baking more.
