Boiled corns are cooked in spinach gravy, this wonderful and healthy dish will be loved by everyone. Please tell me in comments how it turned out for you. 1 cup=250 ml 1 tbsp=15ml 1 tsp=5ml Prep time: 10 minutes Cooking time: 25 minutes Serve: 4 Ingredients: For tomato paste: Chopped tomatoes – 1 medium Chopped ginger – 1 tsp Garlic cloves – 6-7 Cashews – 11-12 For Spinach puree Water- 2.5 cups Cooking soda- ¼ tsp(optional) Washed spinach leaves – 300 gms. For curry: Butter – 1 tbsp Oil – 1 tbsp Green cardamom – 2 Cloves – 2 Bay leaf – 1 Chopped onion – 1 large Turmeric powder – ¼ tsp Red chili powder – 1 tsp Garam masala – ¼ tsp Hot water – 1 cup Boiled corn kernels – 1 cup or 200 gms. Salt to taste Fresh cream – 2 tbsp For tadka: Ghee – 1 tbsp Sliced garlic cloves – 3-4 Cumin seeds – 1tsp Dry red chili – 4 Recipe: First prepare tomato paste by grinding tomatoes, ginger, garlic and cashews and keep it aside Prepare spinach puree. For his boil water, add cooking soda and add washed spinach. Cook for 3-4 minutes and immediately transfer to ice cold water. Transfer to grinder and blend to a smooth paste using water. Keep it aside. For curry, heat butter and oil. Add green cardamom, cloves, bay leaf and chopped onions. Cook till onions turned brown. Add prepared tomato paste and cook till oil leaves the pan. Add turmeric powder, red chili powder and garam masala powder. Mix well. Add spinach puree and mix well. Add hot water and cook for 10-12 minutes. Add boiled corn kernels, salt to taste and cook for 1-2 minute. Add fresh cream and cook for 1-2 minute. Now prepare tadka. Heat ghee in another pan. add garlic cloves, cumin seeds and dry red chili. Cook for 1-2 minute. Add this tadka to prepared corn curry.
