Chicken marinated first in almond and curd mixture and then cooked with simple kitchen masalas; this recipe should be tried by every chicken lover. Try this yummy malai chicken and do tell me in comments how it turned out for you. 1 cup=250 ml 1 tbsp=15ml 1 tsp=5ml Prep time: 15 minutes cooking time: 30 minutes Marination : 1 hr or more Serve: 3 Ingredients: For marination: Soak 20 almonds to make almond paste Chicken curry cut – 500 gms. Ginger paste – 1 tsp Garlic paste – 1 tsp Pepper powder – ¼ tsp Garam masala – ¼ tsp Lemon juice – 1 tbsp Soaked almond paste – 1 tbsp Thick curd – 2 tbsp Other ingredients: Fried onions – ¼ cup Ghee – 1 tbsp Cooking oil – 1 tbsp Bay leaf – 1 Cumin seeds – 1 tsp Cinnamon stick – 1 inch Cloves – 2 Black peppercorns – 4-5 Chopped onions – 2 medium sized Green chili – 2 Cardamom powder – ¼ tsp Pepper powder – ½ tsp Garam masala – ¼ tsp Kashmiri red chili powder – ½ tsp Water – 1 cup Milk – ½ cup Fresh cream – 50ml or 3 tbsp Dry fenugreek leaves – 2 tsp Coriander leaves to garnish Recipe: Marinate chicken pieces with the ingredients listed under marination for 1 hour or more. Fry the onions till dark brown and cool and crush them. For curry, heat ghee and oil in a pan. Add bay leaf and cumin seeds. Let them crackle. Add cinnamon, cloves, black peppercorns and onions. Cook till they turned soft. Add green chili, cardamom powder, black pepper powder, garam masala, Kashmiri red chili powder. Cook for few seconds. Now add chicken pieces and cook for 10-12 mins on medium flame. Add water. Cover and cook till chicken become soft. Remove the lid and cook chicken till gravy thickens. Add milk and fresh cream. Cook for 4-5 mins. on medium flame. Add crushed onions and dry fenugreek leaves. Cook for a minute. Add coriander leaves and switch off the flame. Cover the pan and let it sit for 10 minutes before serving.
